Today i have come with a famous italian recipe that is loved by vegetarian and i always call it with my endless love parmegana , it is well know, but the way it is prepared is different, today i have come with a method that is easy to prepare and delicious.

 Eggplant 🍆 parmigiana recipe-classic Italian Dish .

Eggplant parmigiana is a classic Italian dish known for its rich flavors and comforting layers, it consists of crispy fried eggplant slices, savory tomato 🍅 sauce, and melted cheese, this can be served as a main course or as a delightful side dish.

In this easy recipe, i will guide you step-by to make a restaurant-quality eggplant parmigiana at home.

Ingredients:

• 3 larg eggplants 🍆 

• 3 cups of tomato sauce ( preferably homemade, but store-bought works too ).

• 2 cups of shredded mozzarella cheese .

• 1 cup of grated parmesan cheese .

• 1 cup of Flour.

• 2 beaten eggs .

• Vegetables oil for frying ( olive oil is recommended for extra flavor)

• salt and black pepper to taste .

• fresh basil leaves for garnish .

Instructions:

Step 1 : preparing the eggplant :

• wash the eggplants and slice them into 1 cm ( about 0.4 inch) thick rounds 

• sprinkle salt over the slices and  place  them in a colander for 20-30 minutes. This helps draw out excess moisture and reduce bitterness.

• pat the slices dry with a paper towel to ensure they are ready for frying .

Step : 2 Frying the eggplant:

• Place Flour in one bowl and beaten eggs in another.

• Dip each eggplant slice first into the flour, ensuring it is fully coated, then into the beaten eggs 🥚 

• Heat oil in frying pan over medium heat , and fry the slices until golden brown and crispy 

• Transfer the fried slices to pepper towel to absorb excess oil .

Step 3: Assembling the dish:

• preheat the oven to 180°c ( 350°F) 

• Spread a thin layer of tomato sauce on the bottom of a baking dish to prevent sticking.

• Add a layer of fried eggplant slices, then sprinkle mozzarella and parmesan cheese on top

• Repeat the layer (sauce, eggplant, cheese) until all ingredients are used, finishing with a generous cheese layer .

Step 4 : Baking:

Bake for 25-30 minutes, or until the cheese is melted and golden brown .

• for a crispy cheese top, you can switch to broil mode for the last few minutes of baking.

5 Serving: 

• Let the dish cool slightly before serving to make it easier to slice and serve.

• Garnish with fresh basil leaves for an extra burst of flavors and a beautiful presentation .

Choose fresh eggplants : Opt for small to medium-sized eggplant as they tend to have fewer seeds and less bitterness.
