Ingredients ( serves 2-3)

here’s everything you need to prepare this vegetable pasta with soy sauce :

  • 1 Small carrot, peeled and thinly sliced.
  • 1 green bell pepper, sliced thin ( optional: red or yellow peppers for color ).
  • 1 small onion 🧅, sliced.
  • 1 small eggplant 🍆, diced.
  • 2 cloves garlic 🧄, minced.
  • 2 slices fresh ginger, grated.
  • 1 teaspoon salt.
  • 1 teaspoon black pepper.
  • 3 tablespoons soy sauce.
