Ingredients: 

• 2 cups broccoli, chopped.

• 1 medium onion, chopped.

• 2 garlic 🧄 cloves, minced.

• 1 carrot, chopped (optional).

• 2 cups chicken or vegetable broth. 

• 1 cup milk or cooking cream (as preferred).

• 1 tablespoons butter or olive oil.

• 1/2 teaspoon salt.

• 1/2 teaspoon black pepper.

• 1/2 teaspoon nutmeg (optional). 

• 1/2 cup shredded cheddar cheese.


Instructions:

1 prepare the vegetables:

heat the butter or oil in a pot, then add the onion and garlic and sauté until softened.

2 Add broccoli and carrot 🥕: 

 (if using) and broccoli, and sauté for 3 minutes.

3  Add the broth:

pou in the broth and let the mixture simmer for 10-15 minutes until the vegetables are tender.

4 Blend the soup :

use an immersion blender to puree the soup until smooth (or leave some chunks if preferred).

5 Add cream and seasonings: 

the milk or cream and stir well, then season with salt, black pepper, and nutmeg.

• 6 Add the cheese:

If desired, add the shredded cheese and stir until melted.

• 7 serve :

hot with toasted bread.

* 4 slices of bread 🍞 ( preferably with bread or toast ) 
* 3 tablespoons olive oil 
* 1 teaspoon garlic powder ( optional)
* 1 teaspoon dried herbs ( such as thyme or oregano ).
A pinch of salt .
A pinch of black pepper.
Instructions:

1 Preheat the oven : cut the bread slices to 180°C (350°F) 
 
2 Cut the bread : cut the bread slices into small, evenly sized cubes.
3 Prepare the seasoning: in a bowl, mix the olive oil with garlic powder dried herbs ( thyme oregano) salt,and pepper 

4 coat the bread: Add the bread cubes to the bowl and toss well until all pieces are evenly coated with seasoning.
5 Bake the cubes : spread the bread cubes on a baking tray lined with parchment paper in a single layer.
6 Toast the croutons: Bake the cubes in the oven for 10-15 minutes or untill they become golden and crispy.
7 serve: let the croutons cool slightly before using them in salad or soups .
