as i was preparingit i thought to myself why not share the recipe with you? You are my second family,and sharing my favorite dishes and delicious recipes with you always brings me joy i never imagined thet quesadillas could taste so delicious. i tasted them while working in mexican restaurant, and since then they have become my favorite, easy, and delicious meal, because of them, they made me lovee mexican cooking.

Ingredients:
To make 4 servings of quesadillas, you’ll need the following ingredients:
• Tortillas: 4 round pieces ( flour or corn, depending on your preference).
• Cheddar cheese: 1 cup, shredded ( or any melting cheese like Monterey jack or mozzarella)
• Bell pepper:1/2 cup thinly sliced.
• Onion:1/2 cup thinly sliced
• Corn:1/4 cup (optional, but adds a sweet crunch)
• Spices: A pinch of paprika, cumin and black pepper for seasoning.
• Butter or olive oil: A small amount for greasing the pan.
• Protein : grilled chicken, beef, or even black beans for a vegetarian option (optional).
Instructions:
1. Prepare the filling:
Start by preparing the filling for your quesadilla, heat a small amount of oil in a pan over medium heat, add the sliced onions and bell peppers, and sauté until they soften slightly, if you’re using protein like grilled chicken, add it to the pan along with the corn and spices, stir everything together for about a minute to let the flavors meld, remove the filling from the heat and set it aside

2 Assemble the quesadilla:
• Next, heat a clean skillet over medium heat and lightly grease it with butter or olive oil, place one tortilla in the skillet and sprinkle half of the Shredded cheese evenly over it, spread the prepared on top of the cheese, then sprinkle the remaining cheese over the filling, this double layer of cheese ensure a perfectly gooey quesadilla, finally, cover the filling with another tortilla

3 cook the quesadilla:
Gently press the quesadilla down with a spatula to help it hold together, cook for 2-3 minutes, or until the bottom tortilla turns golden brown and crispy, carefully flip the quesadilla using a spatula and cook the other side until the cheese is fully melted and the tortilla is golden brown, repeat the process for the remaining quesadillas.
4. Serve:
Once cooked, transfer the quesadilla to a cutting board and let it cool for a minute, cut it into triangles using a sharp knife or pizza cutter, serve warm with your favorite dipping sauces, such as guacamole, sour cream, or spicy tomato salsa, these sides add an extra layer of flavor and make the dish even more enjoyable.
